Goro Bedesa is located in Hambela Woreda of the Guji Zone. This particular washing station has been around for 5 years. The station collects red cherries from smallholder farmers surrounding it. From sun up to almost sunset, the farmers' red cherries on the farm deliver whatever they collect that day to the Goro Bedesa washing station to be processed.

Processing

Following the cherry flotation process, a meticulous selection process ensues. Only the finest red cherries are chosen for the creation of this unique anaerobic lot. This stringent selection ensures that the coffee produced is of the highest quality, boasting a desirable flavour profile.

Before the coffee cherries undergo any processing, they must be sorted to remove unwanted cherries, foreign objects, and floaters. This is typically done through a process called cherry flotation, where the cherries are placed in water, and any unwanted materials will float to the top and can be easily removed.

After the cherry flotation process, the best red cherries are selected for processing into this particular anaerobic lot. Only using the best cherries can give the coffee a higher quality and desirable flavour profile.

Barrels are used to create an oxygen-free environment, which can allow for unique and desirable flavours to develop during the fermentation process. This anaerobic coffee was fermented for
Grain-pro bags were rotated every four hours during the fermentation process. This could help ensure that the cherries are evenly fermented, resulting in a more consistent flavour profile in the finished coffee.

After fermentation, the coffee cherries were laid out in the sun for 10-21 days until they reached an optimal moisture content. This is an essential step in the coffee drying process, as it can help to ensure that the coffee is appropriately dried and stabilized before being further processed.
